Preheat your oven to 200°C and line a baking tray.
Place the flour, sugar and baking powder in the bowl of a food processor and mix briefly to combine.
Add the cubes of butter and pulse to combine until the mixture resembles bread crumbs – do not over mix!
Whisk the egg, milk and vanilla extract (or essence) together in a measuring jug.
While pulsing the food processor – add the liquid bit by bit – once again taking care not to overmix! Leave 1 tbsp of the liquid to egg wash the top of the scones before baking.
Place the dough on a floured surface, bring together into a ball and pat down lightly to form an even thickness of 2-3cm.
Use a round cookie or scone cutter dipped in flour to cut out individual scones.
Lightly brush the scones with the egg wash, sprinkle with extra SWEETLY Baking Sugar Substitute (optional) and bake for 15-20 minutes until golden brown on top and just cooked.
Remove from the oven and serve immediately with strawberry jam and whipped cream!
