Preheat the oven to 170°C and line two baking trays with baking paper.
Cream the softened butter on high speed until pale. Add the egg and NOMU Vanilla Essence and beat until combined.
Sift together the SWEETLY Baking Sugar Substitute, cake flour, baking powder and NOMU Ground Cinnamon. Add to the butter mixture and mix slowly until just combined.
Add the rolled oats, raisins, sunflower seeds and milk and mix to form a soft dough.
Roll tablespoon measures of the cookie dough into balls and place on the prepared baking trays 5 cm apart. Flatten the balls to 1 cm thick by pressing down with your fingertips.
Bake for 20-25 minutes or until the cookies are golden brown and cooked through.
Allow to cool slightly before removing to a wire rack to cool completely.
TIP – you can replace the raisins for dried cranberries or chocolate drops.
